- 4 large eggs, room temperature
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- ¾ cup all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 1 cup white chocolate chips or white candy melts
- Red and blue gel food coloring
Instructions
- Preheat oven to 350°F (175°C). Line and grease a jelly roll pan.
- Beat eggs until thick and pale; add sugar and vanilla, mixing well.
- Whisk dry ingredients and gently fold into egg mixture until combined.
- Spread batter in the pan and bake for 10-12 minutes until springy.
- Roll the warm cake in a towel dusted with powdered sugar; cool completely.
- Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
- Unroll cooled cake, spread filling evenly, re-roll without the towel, then chill for at least an hour.
- Melt white chocolate with cream; cool slightly before glazing the cake.
- Decorate with streaks of red and blue gel food coloring and fondant stars.
