Ingredients
- 1 cup cooked shrimp or chicken
- 1/2 cup diced chicken sausage
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/2 cup cooked rice
- 1 tbsp Cajun seasoning
- 6–8 egg roll wrappers
- Vegetable oil for frying
Instructions
- In a mixing bowl, combine shrimp or chicken, chicken sausage, cheddar cheese, bell pepper, onion, rice, and Cajun seasoning. Mix well.
- Lay an egg roll wrapper on a clean surface with one corner facing you. Place two tablespoons of filling near the bottom corner and wrap tightly, folding in sides and sealing with water.
- Heat vegetable oil in a frying pan over medium heat until it reaches 350°F (175°C). Fry egg rolls in batches until golden brown on all sides (about 3-4 minutes per side).
- Drain on paper towels and serve hot with your choice of dipping sauces.
