Instructions
- Prepare the lavender simple syrup by combining 1/2 cup water, 1/2 cup sugar, and 2 tablespoons dried lavender in a small saucepan. Bring to a boil, then simmer for 5 minutes before straining and cooling.
- In two tall glasses, gently muddle the fresh mint leaves with lime juice to release their oils.
- Add the lavender simple syrup to each glass and fill with ice cubes. Stir gently.
- Top each glass with sparkling water, creating a lovely gradient effect.
- Garnish with fresh lavender sprigs and additional mint leaves before serving.
