- 1 ½ cups all-purpose flour
- 1 cup vegan protein powder (vanilla or unflavored)
- ½ cup rolled oats
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup unsweetened applesauce
- ½ cup non-dairy milk (almond, soy, or oat)
- ¼ cup maple syrup
- ¼ cup melted coconut oil
- 2 flax eggs (2 tbsp flaxseed meal + 6 tbsp water)
- 1 teaspoon vanilla extract
- Optional: ½ cup berries or chocolate chips
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, protein powder, oats, baking soda, baking powder, and salt.
- In another bowl, mix applesauce, non-dairy milk, maple syrup, melted coconut oil, flax eggs, and vanilla extract.
- Combine wet ingredients into dry ingredients and stir gently until just mixed. Fold in optional berries or chocolate chips if desired.
- Fill each muffin cup about two-thirds full with batter.
- Bake for 18–22 minutes or until a toothpick inserted comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.
