Instructions
- Preheat oven to 375°F (190°C) and line muffin pan with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, combine egg, milk, melted butter, and vanilla until mixed.
- Pour wet ingredients into dry ingredients; stir gently until just moistened.
- Fold in chopped apples.
- For streusel topping: mix flour, brown sugar, cinnamon in a bowl; cut in cold butter until crumbly.
- Divide muffin batter among the cups and top with streusel.
- Bake for 18-22 minutes until golden and a skewer comes out clean.
- Cool slightly before transferring to a wire rack.
