  • 1/2 cup extra-virgin olive oil
  • 1/2 cup balsamic vinegar
  • 1/4 cup low-sodium soy sauce
  • 1/8 cup fresh lemon juice
  • 3/4 cup packed brown sugar
  • 2 tsp dried rosemary
  • 2 tbsp dijon mustard
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 2 tsp garlic powder
  • 6 boneless chicken breasts or 3.5 lb chicken

Instructions

  1. In a mixing bowl, combine olive oil, balsamic vinegar, soy sauce, lemon juice, brown sugar, dried rosemary, Dijon mustard, salt, pepper, and garlic powder. Whisk until smooth.
  2. Place chicken in a Ziploc bag or container. Pour the marinade over the chicken and seal tightly.
  3. Refrigerate for at least 30 minutes (up to overnight).
  4. Preheat grill or oven as desired. Remove chicken from marinade and discard excess liquid.
  5. Cook until the internal temperature reaches 165°F (75°C). Enjoy!
