- 1 1/2 cups all-purpose flour
- 3/4 cup packed brown sugar
- 1 1/2 tsp baking powder
- 1 tsp ground allspice
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup apple butter
- 3/4 cup melted butter
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp granulated sugar
- 1/8 tsp ground allspice
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine flour, brown sugar, baking powder, ground allspice, baking soda, and salt.
- In another bowl, mix together apple butter, melted butter, eggs (whisked), and vanilla until smooth.
- Gently fold the wet mixture into the dry ingredients until just combined; do not overmix.
- Line a muffin tin with liners or grease it lightly. Portion batter evenly into each cup.
- Sprinkle tops with a mixture of granulated sugar and ground allspice.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Allow to cool for 5 minutes in the pan before transferring to a wire rack.
