Ingredients
- 4 slices sourdough bread
- 1 large heirloom tomato, sliced
- Whole milk mozzarella cheese, sliced
- 1 handful arugula or baby spinach
- 1/4 cup mayonnaise
- 1 tbsp pesto
Instructions
- Gather all ingredients and slice the heirloom tomato and mozzarella cheese evenly.
- Spread half of the mayonnaise on one slice of sourdough and half of the pesto on another.
- Layer cooked chicken (or your preferred alternative), sliced tomato, mozzarella cheese, and arugula on the assembled slices.
- Preheat your panini press or grill pan over medium heat. Grill the sandwich for about 3-5 minutes until golden brown and crispy.
- Remove from heat, slice diagonally, and serve warm with your favorite sides.
