- 36 Golden Oreo cookies
- ½ cup unsalted melted butter
- 6 oz. sweetened berry blue vegan gelatin
- 2/3 cup boiling water
- ½ cup Greek yogurt
- 1 ½ cups fresh blueberries
- 8 oz. cream cheese (softened)
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 4 cups sliced strawberries
Instructions
- Prepare the Oreo crust by processing cookies into fine crumbs, mixing with melted butter and optional sprinkles. Press into a dish and chill.
- Make the blueberry cheesecake layer by dissolving berry blue gelatin in boiling water, then combining it with Greek yogurt, cream cheese, and whipped cream. Spread over the crust.
- For the strawberry layer, dissolve strawberry gelatin in boiling water, mix in iced water, pour over arranged strawberries on top of the cheesecake layer.
- Refrigerate until set for at least 4-6 hours before serving.
