  • 6 oz. sweetened berry blue vegan gelatin
  • 2/3 cup boiling water
  • ½ cup Greek yogurt
  • 1 ½ cups fresh blueberries
  • 8 oz. cream cheese (softened)
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 cups sliced strawberries

Instructions

  1. Prepare the Oreo crust by processing cookies into fine crumbs, mixing with melted butter and optional sprinkles. Press into a dish and chill.
  2. Make the blueberry cheesecake layer by dissolving berry blue gelatin in boiling water, then combining it with Greek yogurt, cream cheese, and whipped cream. Spread over the crust.
  3. For the strawberry layer, dissolve strawberry gelatin in boiling water, mix in iced water, pour over arranged strawberries on top of the cheesecake layer.
