- 1 cup unsalted butter, at room temperature
- 3/4 cup sugar
- 1 large egg
- 1/4 cup fresh squeezed lemon juice
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup diced fresh strawberries
- 1 cup powdered sugar, sifted
- 1 Tbsp strawberry puree
- Lemon juice, about 1 Tbsp
Instructions
- Preheat oven to 350°F.
- Line a 9-inch square baking pan with parchment paper.
- In a mixing bowl, cream together butter and sugar until fluffy. Beat in the egg and mix in lemon juice.
- In another bowl, whisk together flour, baking powder, and salt; gradually add to wet ingredients until combined.
- Fold in diced strawberries and spread the mixture evenly into the prepared pan.
- Bake for 30-35 minutes until golden around edges; check doneness with a toothpick.
- Cool completely before glazing with a mixture of powdered sugar, strawberry puree, and lemon juice.
