Ingredients
- 2 lbs red potatoes
- ½ cup mayonnaise
- ¼ cup sour cream
- 2 tbsp apple cider vinegar
- 2 tbsp Dijon mustard
- 1 cup shredded cheddar cheese
- 5 strips cooked turkey bacon
- Salt and pepper, to taste
- 1 small red onion, chopped
- ¼ cup chopped parsley
- ¼ cup chopped dill pickles
Instructions
- Boil cubed red potatoes in a large pot of salted water until fork-tender (10-15 minutes). Drain and cool to room temperature.
- In a mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, and apple cider vinegar until smooth.
- Gently fold cooled potatoes, chopped red onion, crumbled turkey bacon, shredded cheddar cheese, chopped parsley, and dill pickles into the dressing.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 1 hour before serving.
