- 2 lbs boneless skinless chicken breast
- 2 tablespoons olive oil
- 1 can black beans (drained and rinsed)
- 1.5 cups corn kernels (fresh or frozen)
- 1.5 cups cooked rice
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1 avocado (sliced)
- 0.5 cup sour cream
- Fresh cilantro (chopped) for garnish
- 2 limes
Instructions
- Cut chicken into bite-sized cubes and season with salt and pepper.
- In a skillet, heat olive oil over medium-high heat and add chicken along with cumin, chili powder, paprika, and additional seasoning. Cook until golden brown (about 8-10 minutes).
- Warm the cooked rice and divide it among serving bowls as the base layer.
- Top each bowl with black beans, corn kernels, and cooked chicken cubes.
- Add diced tomatoes, sliced avocado, shredded cheese, and a dollop of sour cream on top.
- Garnish with fresh cilantro and serve immediately with lime wedges.
