- 1 cup pitted dates
- 1/4 cup almond butter or peanut butter
- 1/4 cup honey
- 1 tsp vanilla extract
- 1 cup roasted almonds, chopped
- 1/2 cup old-fashioned oats
- 3/4 cup dried mixed fruit
- 1/4 cup raw pumpkin seeds
Instructions
- Line an 8×8 inch baking dish with parchment paper, leaving some overhang.
- In a food processor, blend pitted dates, almond butter (or peanut butter), honey, and vanilla until smooth.
- In a mixing bowl, combine chopped almonds, oats, dried mixed fruit, and pumpkin seeds; add the date mixture and stir until evenly coated.
- Press the mixture firmly into the prepared dish.
- Refrigerate for at least two hours until firm before slicing into bars.
