- 1 1/2 cups almond flour
- 1/3 cup coconut sugar

- 2 tbsp melted coconut oil
- 1/3 cup canned pumpkin puree
- Optional: 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, coconut sugar, pumpkin pie spice blend, and ground cinnamon.
- In another bowl, mix melted coconut oil, canned pumpkin puree, and optional vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Drop tablespoon-sized amounts of dough onto the prepared baking sheet.
- Bake for 12-15 minutes or until golden around the edges.
- Allow to cool before enjoying.
