- Heavy cream
- Whole milk
- Granulated sugar
- Large egg yolks
- Unsalted butter
- Vanilla extract
- Sea salt flakes
- Light corn syrup
Instructions
- Prepare the Caramel: In a heavy-bottomed saucepan, combine sugar and corn syrup over medium heat. Cook without stirring until deep amber, about 8-10 minutes. Remove from heat and whisk in unsalted butter until smooth.
- Make the Custard Base: Heat heavy cream and whole milk in another saucepan until simmering. Whisk egg yolks with remaining sugar until pale, then temper the hot cream into the yolks while whisking constantly.
- Combine Mixtures: Return the mixture to low heat, stirring until it coats the back of a spoon (about 170°F). Strain through a fine-mesh sieve, stir in vanilla extract, and cool completely.
- Create Swirls: Swirl cooled caramel into the custard base and pour into Ninja Creami container. Freeze for at least 24 hours.
- Process and Serve: Remove from freezer and process in Ninja Creami on Ice Cream setting. Use Re-spin if needed, then serve topped with sea salt flakes.
