Ingredients

  • Heavy cream
  • Whole milk
  • Granulated sugar
  • Large egg yolks
  • Unsalted butter
  • Vanilla extract
  • Sea salt flakes
  • Light corn syrup

Instructions

  1. Prepare the Caramel: In a heavy-bottomed saucepan, combine sugar and corn syrup over medium heat. Cook without stirring until deep amber, about 8-10 minutes. Remove from heat and whisk in unsalted butter until smooth.
  2. Make the Custard Base: Heat heavy cream and whole milk in another saucepan until simmering. Whisk egg yolks with remaining sugar until pale, then temper the hot cream into the yolks while whisking constantly.
  3. Combine Mixtures: Return the mixture to low heat, stirring until it coats the back of a spoon (about 170°F). Strain through a fine-mesh sieve, stir in vanilla extract, and cool completely.
  4. Create Swirls: Swirl cooled caramel into the custard base and pour into Ninja Creami container. Freeze for at least 24 hours.
