Ingredients
- 1 tablespoon vegetable oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups water
- 1 cup frozen potstickers or dumplings
- 1 cup baby bok choy, chopped
- 1 cup shiitake mushrooms, sliced
- 1 carrot, thinly sliced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat until shimmering.
- Sauté the diced onion and minced garlic until the onion becomes translucent (about 3 minutes).
- Add the chicken or vegetable broth and water; bring to a simmer.
- Stir in the frozen potstickers; cook for about 5–8 minutes until they float.
- Add the bok choy, shiitake mushrooms, and sliced carrot; cook for an additional 5 minutes until veggies are tender.
- Mix in soy sauce, sesame oil, and ginger; season with salt and pepper to taste.
- Serve hot in bowls garnished with chopped green onions and cilantro if desired.
