- 8 oz wide Lo Mein noodles
- 1 tablespoon peanut oil
- 1 pound ground beef
- 4 cups coleslaw mix
- 1/2 cup low-sodium chicken broth
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
Instructions
- Cook the Lo Mein noodles according to package instructions; rinse and set aside.
- In a skillet, heat peanut oil over medium-high heat. Brown the ground beef with sliced green onions until cooked through.
- Whisk together chicken broth, dark soy sauce, garlic, ginger, sesame oil, and sriracha in a bowl.
- Add the cooked noodles and coleslaw mix to the skillet, pour in the sauce, and toss until well combined.
- Heat everything through for 2-3 minutes before serving.
