Instructions
- Boil peeled potatoes in salted water until fork-tender (about 20 minutes). Drain and mash until smooth with some small lumps for texture.
- In a mixing bowl, combine mashed potatoes with eggs, chopped parsley, onion, garlic, cumin, paprika, salt, and pepper. Mix until well blended.
- Shape the mixture into small oval patties (2-3 inches long) using wet hands. Let rest for 10 minutes to firm up.
- Heat about 1/2 inch of vegetable oil in a frying pan over medium-high heat until shimmering.
- Fry the patties in batches for 3-4 minutes per side until golden brown and crispy. Transfer to paper towels to drain excess oil before serving hot.
