- 1 cup mashed ripe bananas (about 2-3 medium bananas)
- 1/2 cup chopped walnuts, plus additional for topping
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it or lining it with paper liners.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, then stir in the vanilla extract and mashed bananas until well combined.
- Gradually mix in the dry ingredients until just combined; avoid overmixing.
- Gently fold in the chopped walnuts.
- Divide the batter among the muffin cups, filling each about two-thirds full and sprinkling extra walnuts on top if desired.
- Bake for 18-22 minutes or until a skewer inserted comes out clean. Let cool before serving.
