Instructions
- Preheat your oven to 350°F (175°C) and grease your bundt pan.
- In a mixing bowl, whisk together eggs, sugar, and oil. Add vanilla essence and mix until combined.
- In another bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Gradually add this mixture to the wet ingredients until just combined.
- Gently fold in shredded zucchini, chopped pecans, and raisins until evenly distributed.
- Pour the batter into the prepared bundt pan and bake for 45–50 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
