Ingredients
- 1/2 cup unsalted butter
- 1 cup water
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 6 ounces semisweet chocolate, chopped
- 6 ounces white chocolate or candy melts
- Red gel food coloring
- Blue gel food coloring
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium saucepan, combine butter, water, and salt; bring to a boil. Remove from heat and stir in flour until dough forms.
- Transfer dough to a bowl; beat in eggs one at a time until smooth.
- Pipe the dough onto the baking sheet into long lines; bake for 20-25 minutes until golden brown.
- For the filling, heat milk until steaming; whisk together sugar, cornstarch, and egg yolks in a separate bowl. Gradually mix hot milk into the egg mixture while whisking.
- Return mixture to saucepan; cook over medium heat until thickened. Stir in chocolate and butter until smooth; chill before filling éclairs.
- Once cool, fill éclairs with pastry cream using a piping bag.
- Melt white chocolate; color portions red and blue with gel food coloring for decoration.
