  • 1 cup water
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 6 ounces semisweet chocolate, chopped
  • 6 ounces white chocolate or candy melts
  • Red gel food coloring
  • Blue gel food coloring

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine butter, water, and salt; bring to a boil. Remove from heat and stir in flour until dough forms.
  3. Transfer dough to a bowl; beat in eggs one at a time until smooth.
  4. Pipe the dough onto the baking sheet into long lines; bake for 20-25 minutes until golden brown.
  5. For the filling, heat milk until steaming; whisk together sugar, cornstarch, and egg yolks in a separate bowl. Gradually mix hot milk into the egg mixture while whisking.
  6. Return mixture to saucepan; cook over medium heat until thickened. Stir in chocolate and butter until smooth; chill before filling éclairs.
  7. Once cool, fill éclairs with pastry cream using a piping bag.
  8. Melt white chocolate; color portions red and blue with gel food coloring for decoration.
