- 1 lb chicken or turkey sausage
- 12 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion
- 1 bell pepper
- 3 cloves garlic
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup grated Parmesan cheese for garnish
Instructions
- Heat the olive oil in a large pot over medium heat until shimmering.
- Add sliced sausage, diced onion, and chopped bell pepper; sauté until browned (about 5-7 minutes).
- Stir in minced garlic and cook for an additional minute.
- Add diced tomatoes (with juices), chicken broth, heavy cream, Cajun seasoning, salt, and pepper; bring to a boil while stirring frequently.
- Stir in uncooked penne pasta; lower heat and simmer until pasta is tender (10-12 minutes), stirring occasionally.
- Remove from heat and stir in grated Parmesan cheese until melted and creamy.
