Ingredients
- 4 cod fillets (about 6 ounces each)
- 2 cups canned diced tomatoes (or fresh when in season)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Optional: 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Rinse cod fillets under cold water and pat dry. Season both sides with salt and pepper.
- In a large skillet over medium heat, heat olive oil and sauté minced garlic until fragrant (about 1 minute).
- Add diced tomatoes, oregano, and optional red pepper flakes; simmer for about 5 minutes.
- Gently place cod fillets into the sauce, spooning some sauce over them. Cover and simmer for 10-12 minutes until cooked through.
- Remove from heat, garnish with fresh basil, and serve hot.
