  • 3 cups fresh spinach
  • 1.5 cups cherry tomatoes
  • 1 large red bell pepper
  • 1 medium yellow squash
  • 4 garlic cloves
  • 3 tablespoons olive oil
  • Lemon zest
  • Dried oregano
  • Red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. Pat the chicken breast pieces dry and season with salt, black pepper, and half of the dried oregano.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the seasoned chicken for about 5-6 minutes until golden brown; transfer to a plate.
  3. In the same skillet, add remaining olive oil and sauté minced garlic for about 30 seconds until fragrant. Add diced bell pepper and sliced yellow squash; cook for 4-5 minutes until softened.
  4. Stir in halved cherry tomatoes, then return the seared chicken to the pan along with fresh spinach and any remaining seasonings. Toss everything together and cook for another 2-3 minutes until spinach wilts.
  5. Remove from heat, add lemon zest, adjust seasoning if needed, and serve immediately.
