Ingredients
- 1.5 pounds chicken breast
- 3 cups fresh spinach
- 1.5 cups cherry tomatoes
- 1 large red bell pepper
- 1 medium yellow squash
- 4 garlic cloves
- 3 tablespoons olive oil
- Lemon zest
- Dried oregano
- Red pepper flakes
- Salt and black pepper to taste
Instructions
- Pat the chicken breast pieces dry and season with salt, black pepper, and half of the dried oregano.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the seasoned chicken for about 5-6 minutes until golden brown; transfer to a plate.
- In the same skillet, add remaining olive oil and sauté minced garlic for about 30 seconds until fragrant. Add diced bell pepper and sliced yellow squash; cook for 4-5 minutes until softened.
- Stir in halved cherry tomatoes, then return the seared chicken to the pan along with fresh spinach and any remaining seasonings. Toss everything together and cook for another 2-3 minutes until spinach wilts.
- Remove from heat, add lemon zest, adjust seasoning if needed, and serve immediately.
