- 12 ounces spaghetti or preferred pasta
- 4 cups fresh spinach
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Zest and juice of 1 large lemon
- ½ cup grated Parmesan cheese (plus more for serving)
- Salt and pepper to taste
Instructions
- Cook pasta in a large pot of salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1 minute.
- Add spinach to the skillet and cook until wilted, approximately 3-4 minutes.
- Combine drained pasta with the spinach mixture, adding reserved pasta water gradually to create a silky sauce.
- Stir in lemon juice and zest, mixing thoroughly.
- Add grated Parmesan cheese, stirring until well combined. Adjust seasoning as needed.
- Serve warm with extra Parmesan on top if desired.
