- 1 pound boneless, skinless chicken breasts
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 large lemon (juice and zest)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken with salt and pepper. Heat olive oil in a large pot over medium-high heat, then cook chicken until browned (6-7 minutes). Remove and set aside.
- Sauté minced garlic in the same pot for about 30 seconds until fragrant.
- Add chicken broth and bring to a boil. Stir in orzo pasta.
- Return chicken to the pot, reduce heat to low, cover, and simmer for 10-12 minutes until chicken is cooked through and orzo is tender.
- Stir in lemon juice and zest; adjust seasoning if needed.
- Garnish with chopped parsley before serving.
