Ingredients
- 1.5 pounds beef chuck, cut into 1-inch cubes
- 6 cups beef broth
- 1 cup water
- 1 medium onion, chopped
- 2 medium tomatoes, peeled and diced
- 1/2 cup uncooked rice
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon vegetable oil
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt, adjust to taste
- 1/2 teaspoon chili flakes, optional for heat
- 1/4 cup fresh parsley, chopped (for serving)
- 1/4 cup fresh cilantro, chopped (for serving)
Instructions
- In a large pot, heat vegetable oil over medium heat. Sauté chopped onion until translucent (about 5 minutes).
- Add beef cubes; brown on all sides (7-10 minutes).
- Stir in garlic and spices; cook for an additional 2 minutes.
- Mix in diced tomatoes and tomato paste; combine well.
- Pour in beef broth and water; bring to a boil then reduce heat to low to simmer for 30 minutes.
- Add uncooked rice; continue simmering for another 15-20 minutes until rice is tender and beef is cooked through.
- Taste; adjust seasoning if necessary. Serve hot garnished with fresh parsley and cilantro.
