  • Total Time: 45 minutes
  • Yield: Serves approximately 8 slices 1x

Ingredients

Scale
  • 2 tbsp olive oil
  • 1 tbsp salted butter
  • 2 1/2 cups all-purpose flour
  • 1 1/4 cup warm water
  • 1 tbsp sugar
  • 2 tsp instant yeast
  • 3/4 tsp salt
  • 4 cups chopped yellow onions
  • 1/4 cup water
  • 2 tbsp chopped fresh thyme
  • 1/4 cup finely shredded parmesan
  • 2 tbsp olive oil
  • 3 crushed garlic cloves
  • 12 tbsp fresh thyme

Instructions

  1. In a skillet, heat olive oil and butter over medium heat. Add chopped onions and cook slowly until golden brown (20-25 minutes), stirring regularly. Add water halfway through to aid caramelization.
  2. In a mixing bowl, combine flour, sugar, yeast, and salt. Gradually add warm water while stirring until a dough forms. Knead on a floured surface for 5 minutes until smooth.
  3. Place kneaded dough in an oiled bowl, cover with a damp cloth, and let rise in a warm spot for 1 hour or until doubled in size.
  4. Preheat the oven to 400°F (200°C). Punch down the risen dough and transfer it to a parchment-lined baking sheet; shape it into a rectangle about half an inch thick.
  5. Spread caramelized onions over the dough. Drizzle with olive oil, sprinkle on crushed garlic cloves, top with parmesan cheese and fresh thyme.
  6. Bake for 20-25 minutes until golden brown. Allow to cool slightly before slicing.
