- For the Streusel: 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/4 cup cold unsalted butter
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking soda, and salt.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time and stir in vanilla extract.
- Gradually add dry ingredients to wet ingredients alternately with buttermilk until just combined.
- Gently fold in blueberries using a rubber spatula.
- Prepare the streusel by mixing flour, granulated sugar, and brown sugar; cut in cold butter until crumbly.
- Spoon muffin batter into prepared cups and sprinkle with streusel topping.
- Bake for 20-25 minutes or until a skewer comes out clean.
- Cool briefly in the tin before transferring to a wire rack.
