Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cut the carrots into even pieces, about 2 inches long.
- In a mixing bowl, whisk together honey, olive oil, thyme, salt, and pepper.
- Add the carrots to the bowl and toss until evenly coated.
- Spread the carrots on a baking sheet in a single layer.
- Roast for 25–30 minutes, shaking the pan halfway through for even cooking.
- Optional: Broil for an additional 2-3 minutes for enhanced caramelization.
- Serve warm, garnished with fresh thyme sprigs if desired.
