Instructions
- Prepare the Chicken: Pat chicken thighs dry, season with salt, pepper, paprika, and onion powder. Let sit at room temperature for 15 minutes.
- Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Cook chicken thighs skin-side down for 5-6 minutes until golden brown. Flip and cook for an additional 3 minutes. Remove from skillet.
- Cook the Rice: In the same skillet, sauté minced garlic until fragrant. Add jasmine rice, stirring to coat with drippings, then add chicken broth and bring to a simmer.
- Create the Creamy Sauce: Stir in heavy cream and fresh thyme. Return seared chicken to skillet skin-side up, cover, and simmer for 20 minutes until cooked through.
- Serve: Let rest for 5 minutes before garnishing with chopped parsley.
