- 1 teaspoon ground cinnamon
- 1 large egg (or flax egg for vegan option)
- 1/2 cup milk (dairy-free milk optional)
- 1 whole fresh pineapple (sliced into rings)
- 2 cups vegetable oil (canola or coconut oil)
Instructions
- Slice the fresh pineapple into 1/2-inch thick rings and set aside.
- In a mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon. Create a well in the center; add the egg and milk, then stir until smooth.
- Heat vegetable oil in a large pot to 375°F (190°C).
- Dip each pineapple ring into the batter, allowing excess to drip off before frying.
- Fry in batches for about 2 minutes on each side until golden brown.
- Remove from oil using a slotted spoon and drain on paper towels; dust with cinnamon and sugar while warm.
- Serve immediately for the best taste.
