- 8 oz Cream Cheese (softened)
- 2 Eggs
- 1 cup Almond Flour
- 1 tsp Baking Powder
- 2 tsp Cinnamon
- ½ cup Erythritol or Monk Fruit Sweetener
- 1 tsp Vanilla Extract
- Butter (for greasing)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking sheet with butter.
- In a mixing bowl, blend softened cream cheese and eggs until smooth. Gradually incorporate almond flour, baking powder, cinnamon, erythritol (or sweetener), and vanilla extract to form a dough.
- Roll out the dough into thin rectangles on a floured surface and spread the cinnamon mixture evenly over each rectangle.
- Roll each rectangle tightly from one of the shorter sides and place seam side down on the prepared baking sheet.
- Bake for 15-20 minutes until golden brown. Allow to cool slightly before serving.
