- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 2 cups fresh broccoli florets
- ½ cup heavy cream
- 2 tablespoons mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Season chicken with salt, pepper, garlic powder, and onion powder.
- Heat grill pan or outdoor grill over medium-high heat with olive oil. Grill chicken for 6-7 minutes on each side until cooked through (165°F internal temperature).
- Blanch broccoli in boiling water for 2-3 minutes; drain and place in ice water to keep crisp.
- In a bowl, whisk together heavy cream, mayonnaise, minced garlic, and lemon juice; season to taste.
- Slice the grilled chicken after resting for a few minutes.
- Assemble bowls with blanched broccoli topped with sliced chicken and drizzle sauce on top.
- Garnish with fresh parsley.
