- Chocolate sandwich cookies
- Butter

Instructions
- Prepare the crust by crushing chocolate sandwich cookies and mixing them with melted butter. Press into a 9-inch pie pan and refrigerate for 30 minutes.
- In a bowl, beat softened cream cheese until smooth. In another bowl, whip heavy cream to soft peaks, gradually adding powdered sugar until stiff peaks form. Fold whipped cream into cream cheese along with mint extract and food coloring.
- Spoon the mint filling into the chilled crust and refrigerate for at least two hours until set.
- For the ganache, heat heavy cream until simmering, pour over chopped dark chocolate, let sit for two minutes, then stir until smooth. Allow to cool slightly before pouring over the mint filling.
- Decorate with whipped cream rosettes and additional cookie crumbs if desired.
