  • 7 large Granny Smith apples, peeled, cored, cut in 1/2-inch slices
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tbsp lemon juice
  • Zest from 1/2 a lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel, core, and slice the Granny Smith apples into 1/2-inch pieces.
  3. In a mixing bowl, combine apple slices with white sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and zest. Mix well and let sit for 10 minutes.
  4. Place one pie shell in your dish and fill it with the apple mixture. Cover with the second pie shell and seal edges by crimping.
  5. Cut slits in the top crust for steam to escape and apply beaten egg wash if desired.
  6. Bake for 45–50 minutes until golden brown and bubbling. Allow to cool before slicing.
