  3. For the filling, whisk together lemon zest, juice, cornstarch, superfine sugar, egg yolks, and water in a saucepan over medium heat until thickened (5-7 minutes). Pour into cooled crust.
  4. Beat egg whites in a clean bowl until soft peaks form. Gradually add superfine sugar until stiff peaks form. Fold in cornstarch gently.
  5. Spread meringue over the lemon filling and bake for another 10-15 minutes until golden brown. Let cool before serving.
