Ingredients
- 8 oz plain flour
- 6 oz unsalted butter
- 1 3/4 oz confectioners' sugar
- 1 large egg, beaten
- Zest and juice from 6 lemons
- 2 1/4 oz cornstarch
- 9 oz superfine sugar
- 6 egg yolks
- 16 fl oz water
- 4 egg whites
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine flour, butter, and confectioners' sugar until crumbly. Add the beaten egg, form into dough, wrap in plastic, and chill for 30 minutes.
- Roll out the chilled dough on a floured surface to fit your baking dish. Prick with a fork, cover with parchment paper and fill with beans or rice. Bake for 15-20 minutes until golden. Cool completely.
- For the filling, whisk together lemon zest, juice, cornstarch, superfine sugar, egg yolks, and water in a saucepan over medium heat until thickened (5-7 minutes). Pour into cooled crust.
- Beat egg whites in a clean bowl until soft peaks form. Gradually add superfine sugar until stiff peaks form. Fold in cornstarch gently.
- Spread meringue over the lemon filling and bake for another 10-15 minutes until golden brown. Let cool before serving.
