  • 1 pound chicken sausage or turkey sausage

  • 1 (15 ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large skillet over medium-high heat, heat olive oil and brown the sausage, breaking it up as it cooks (7–10 minutes). Set aside.
  2. In the same skillet, sauté chopped onion until softened (5–7 minutes), then add garlic and cook until fragrant.
  3. Deglaze the pan with dry white grape juice, scraping up browned bits; simmer for 2–3 minutes.
  4. Add crushed tomatoes and seasonings; let sauce simmer on low for at least 15 minutes.
  5. Stir in heavy cream, Parmesan cheese, and butter until melted.
  6. Cook tortellini according to package instructions; drain well.
  7. Combine cooked tortellini with the sauce and sausage in the skillet; toss gently to coat.
  8. Serve immediately garnished with fresh parsley and extra Parmesan.
