- 1 (20 ounce) package refrigerated cheese tortellini
- 1 pound chicken sausage or turkey sausage
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1/2 cup dry white grape juice
- 1 (15 ounce) can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese, plus more for serving
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large skillet over medium-high heat, heat olive oil and brown the sausage, breaking it up as it cooks (7–10 minutes). Set aside.
- In the same skillet, sauté chopped onion until softened (5–7 minutes), then add garlic and cook until fragrant.
- Deglaze the pan with dry white grape juice, scraping up browned bits; simmer for 2–3 minutes.
- Add crushed tomatoes and seasonings; let sauce simmer on low for at least 15 minutes.
- Stir in heavy cream, Parmesan cheese, and butter until melted.
- Cook tortellini according to package instructions; drain well.
- Combine cooked tortellini with the sauce and sausage in the skillet; toss gently to coat.
- Serve immediately garnished with fresh parsley and extra Parmesan.
