- 4 cloves garlic, minced
- 4 tbsp melted butter
- 2 tbsp olive oil
- 2 lbs baby potatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried rosemary
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat your oven to 425°F (220°C). Wash and scrub the baby potatoes thoroughly, then pat them dry.
- Cut the potatoes in half lengthwise to create flat surfaces for roasting.
- In a large mixing bowl, combine melted butter, olive oil, minced garlic, salt, pepper, and dried rosemary.
- Toss the halved potatoes in the garlic butter mixture until evenly coated.
- Arrange the potatoes cut-side down on a parchment-lined baking sheet. Bake for 35-45 minutes until golden brown and crispy.
- Remove from the oven and garnish with fresh parsley before serving hot.
