- ¾ cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 4 cups powdered sugar, sifted
- 3 tablespoons meringue powder
- 6 tablespoons warm water (plus more as needed)
- Gel food coloring (red and blue)
Instructions
- In a bowl, whisk together flour, baking powder, and salt.
- Cream softened butter and sugar until fluffy. Add egg and vanilla; mix well.
- Gradually combine dry ingredients into wet mixture, forming a soft dough. Chill for at least 1 hour.
- Preheat oven to 350°F (175°C). Roll out chilled dough and cut into shapes.
- Bake for 8-10 minutes until edges are lightly golden. Cool on wire rack.
- Prepare royal icing by mixing powdered sugar, meringue powder, and water until stiff peaks form. Divide and color as desired.
- Decorate cooled cookies with icing and allow to dry completely.
