Instructions
- Gather all ingredients and tools before starting.
- In a saucepan, whisk together sugar, flour, and salt. Gradually stir in hot water until smooth, then cook over medium heat until thickened.
- Remove from heat and add lemon juice; mix well.
- Beat egg yolks in a separate bowl; temper with the hot lemon mixture, then return to saucepan for an additional minute of cooking.
- Preheat oven and pour lemon filling into the prepared pie shell.
- In a clean bowl, beat egg whites until soft peaks form; gradually add sugar and beat until stiff peaks form.
- Spread meringue over the filling, sealing edges to prevent shrinking, and bake according to pie shell instructions or until golden brown.
- Cool completely before serving.
