- 8 oz pasta (penne, fettuccine, or linguine)
- 2 tbsp olive oil
- 1.5 cups fresh mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup fresh spinach
- 1 cup heavy cream
- 0.5 cup freshly grated Parmesan cheese
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté sliced mushrooms for 5–7 minutes until golden.
- Add minced garlic and cook for another 30–60 seconds until fragrant. Stir in fresh spinach until wilted.
- Pour in heavy cream and bring to a gentle simmer. Mix in Parmesan cheese until melted and smooth.
- Toss the cooked pasta into the skillet, ensuring it’s evenly coated with sauce. Season with salt and pepper to taste.
- Remove from heat and garnish with fresh basil before serving.
