  • 12 tbsp softened butter
  • 1/4 cup molasses
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp kosher salt
  • 1 1/2 qt vanilla ice cream
  • 1/2 cup chocolate fudge sauce
  • 2 to 3 cups vegan marshmallows
  • Water, as needed

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine softened butter, molasses, honey, and vanilla extract. Mix until smooth.
  2. In another bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add to the wet mixture until a dough forms. If too dry, add water one tablespoon at a time.
  3. Roll out dough on a floured surface to about 1/8 inch thick. Cut into squares and place on a lined baking sheet.
  4. Bake for 10-12 minutes or until golden brown. Allow to cool completely.
  5. To assemble, spread chocolate fudge sauce on one graham cracker square, add a scoop of vanilla ice cream, then top with another graham cracker square. Optionally garnish with vegan marshmallows.
