Ingredients
- 12 tbsp softened butter
- 1/4 cup molasses
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp kosher salt
- 1 1/2 qt vanilla ice cream
- 1/2 cup chocolate fudge sauce
- 2 to 3 cups vegan marshmallows
- Water, as needed
Instructions
- Preheat oven to 350°F (175°C). In a mixing bowl, combine softened butter, molasses, honey, and vanilla extract. Mix until smooth.
- In another bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add to the wet mixture until a dough forms. If too dry, add water one tablespoon at a time.
- Roll out dough on a floured surface to about 1/8 inch thick. Cut into squares and place on a lined baking sheet.
- Bake for 10-12 minutes or until golden brown. Allow to cool completely.
- To assemble, spread chocolate fudge sauce on one graham cracker square, add a scoop of vanilla ice cream, then top with another graham cracker square. Optionally garnish with vegan marshmallows.
