Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups celery, sliced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the diced onion, minced garlic, sliced carrots, and sliced celery on top of the chicken.
- Pour in the chicken broth and sprinkle with Italian seasoning, salt, and black pepper.
- Cover and cook on low for 6 hours or until the chicken is tender.
- Remove cooked chicken and shred it using two forks before returning it to the pot.
- Stir in heavy cream and grated Parmesan cheese until combined.
- Allow to heat through for an additional 10-15 minutes before serving.
