Ingredients
- 2 boneless chicken breasts
- 2 medium zucchini
- 1 cup cottage cheese
- ½ cup shredded mozzarella
- ¼ cup grated Parmesan
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant.
- Add sliced chicken breasts and cook until browned on both sides (about 5-7 minutes).
- In a bowl, mix cottage cheese, mozzarella, Parmesan, Italian seasoning, salt, and pepper.
- In a baking dish, layer zucchini ribbons at the bottom and top with cooked chicken.
- Spread the cheese mixture evenly over the layered chicken and zucchini.
- Bake for 25-30 minutes until golden brown on top and chicken is cooked through.
- Let cool for a few minutes before serving.
