  • 24 oz marinara sauce
  • 32 fl oz beef or chicken broth
  • 6 to 8 lasagna noodles, broken into 1- to 2-inch pieces
  • 2 cups fresh spinach
  • 1/2 cup whipped cottage cheese
  • Parmesan cheese, as desired

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent.
  2. Add ground beef, cooking until browned while breaking it apart.
  3. Stir in minced garlic, Italian herbs, tomato paste, salt, and pepper; cook for one minute.
  4. Pour in marinara sauce and broth; mix well.
  5. Bring to a gentle boil, then add broken lasagna noodles. Simmer for 10-12 minutes until tender.
  6. Stir in fresh spinach until wilted.
  7. Serve hot, topped with whipped cottage cheese and optional Parmesan.
