  • 300 grams broccoli (cut into small florets)
  • 200 grams halloumi (cubed)
  • 1 fennel (sliced thinly)
  • 3 tablespoons pesto
  • 2 tablespoons olives (sliced into rings)
  • 2 tablespoons roasted red peppers (cut into strips)
  • 2 tablespoons toasted pine nuts
  • Fresh basil for garnish
  • 1 tablespoon olive oil (for frying)

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. In the same pot, blanch broccoli florets for 2-3 minutes, then transfer to ice water.
  3. Heat olive oil in a frying pan over medium heat. Fry halloumi cubes until golden brown on all sides.
  4. In a large bowl, combine cooked pasta, broccoli, fennel, olives, roasted red peppers, pine nuts, and fried halloumi. Drizzle with pesto and toss gently.
  5. Serve garnished with fresh basil.
