Ingredients
- 300 grams pasta of your choice
- 300 grams broccoli (cut into small florets)
- 200 grams halloumi (cubed)
- 1 fennel (sliced thinly)
- 3 tablespoons pesto
- 2 tablespoons olives (sliced into rings)
- 2 tablespoons roasted red peppers (cut into strips)
- 2 tablespoons toasted pine nuts
- Fresh basil for garnish
- 1 tablespoon olive oil (for frying)
Instructions
- Cook pasta in salted boiling water until al dente. Drain and set aside.
- In the same pot, blanch broccoli florets for 2-3 minutes, then transfer to ice water.
- Heat olive oil in a frying pan over medium heat. Fry halloumi cubes until golden brown on all sides.
- In a large bowl, combine cooked pasta, broccoli, fennel, olives, roasted red peppers, pine nuts, and fried halloumi. Drizzle with pesto and toss gently.
- Serve garnished with fresh basil.
