- 2 tablespoons melted butter
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it lightly.
- In a mixing bowl, mash the bananas until smooth and mix in the melted butter.
- Stir in sugar, beaten egg, and vanilla extract until well combined.
- In another bowl, whisk together flour, baking soda, and salt; then gradually mix into the banana mixture without overmixing.
- For the streusel topping, combine brown sugar, flour, melted butter, and cinnamon in a small bowl until crumbly.
- Fill each muffin cup about ¾ full with batter and top generously with streusel.
- Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool before serving.
