- 3 cups regular flour
- 1/2 cup packed brown sugar
- 1/2 cup white sugar
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup cold unsalted butter (cubed)
- 1 large egg (lightly whisked)
- 5 cups nectarines, sliced (approx. 4-6 large nectarines)
- 1/2 cup white sugar (for filling)
- 3 tablespoons cornflour
- 1 tablespoon lemon juice
- 1 teaspoon vanilla essence
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a mixing bowl, combine flour, brown sugar, white sugar, baking powder, cinnamon, nutmeg, and salt. Add cold butter and mix until crumbly. Stir in the whisked egg and press the mixture into the bottom of the prepared dish.
- In another bowl, toss sliced nectarines with white sugar, cornflour, lemon juice, and vanilla essence until well coated.
- Spread the nectarine mixture evenly over the crust.
- Bake for about 35-40 minutes or until golden brown around the edges. Allow cooling before cutting into bars.
