Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- For the crust, mix graham cracker crumbs with melted butter until moistened. Press into the bottom of the springform pan.
- Beat cream cheese until smooth, then add granulated sugar gradually. Mix in eggs one at a time followed by vanilla extract until combined.
- In another bowl, combine ground cinnamon, brown sugar, and honey for the swirl mixture.
- Pour the cream cheese filling over the crust and drop spoonfuls of the cinnamon mixture on top, swirling gently with a knife.
- Place the springform pan in a larger baking dish filled with hot water halfway up the sides and bake for 60-70 minutes until set but slightly jiggly.
- Cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours before serving.
